Chocolate Dilema
IMAG1088-1.jpgSadly I wasn't able to pull off the Chocolate Pave dessert that I was mouth watering over.  I had forgotten the most important ingredient....chocolate.  ;(
Yet I was able to make the Two-Potato Au gratin and the Italian Breaded Chicken.  According to the photo below it may seem that its burnt but it's not.  :) The potato didn't turn out as well as I expected. :/  It was a bit too runny.  I like it when the cream is thicker.  So the next day I just added more corn starch making it into a thick sauce w/rice or pasta on the side. 

On another good note we were able to see some of our wedding photos from the second photographer. Here are a few I was able to some who download.  Bedazzled photography was the second photographer which she was just as good as my primary photographer Jackie Beale.  Their links are down below if you wish to pay them a vist. 
 I love my bouquet.  I worked very hard on it.  Yes I saved the money by making it myself. 
 Thankfully we weren't afraid to lay on the grass or else I wouldn't have gotten such amazing photos!


Other than surprising my hubby with a delicious meal this past "Spring Weekend" we final made our choice and purchased our new bedroom set! I am very excited. It wasn't the set that I had been hoping for but it fits my criteria along with our budget.  Now all I need to do is decorate the living room which needs some loving. 
I promise that I will make the Chocolate Pave I just need my paycheck and then I can get things-a-moving.

"Spring Holiday":Known as Good Friday

Finally a day off from work! You may be saying in you head....(didn't she just get back from her honey moon?).  Yes, yes I did.  I was still on cruise mode ;P.  Anyways so in case you guys didn't know I work at a Family Law Firm as an Administrative Assistant.  I have my moments of being busy and dealing with clients.  Thankfully we were given this upcoming Friday off.  According to our Employee Handbook it is called "Spring Holiday" not Good Friday.  This is my boss being politically correct. 

Since I will have Friday off is time to take care of business.  Besides the boring stuff like putting gas in my car and changing my name legally I am going to surprise James with an awesome Dinner.  He has been so good to me this past week. I normally get home around 6:15pm which is almost dinner time therefore I don't have much time to make dinner, so James has been helping out by prepping the food so by the time I get home I finish cooking it.  I was very impressed that he was able to cook rice without it being soggy or too dry(rice is an art to perfect). 

So, what will be on the menu? Well I was going over the Housekeeping Mag. and encountered a mouth watering Chocolate-Peanut Pave
Since James is a chocoholic I thought it would be a nice treat.  Not just for him but for myself as well.  This Pave is layered with crunchy pieces of peanuts and chocolate whipped cream.  Mmm YUM!
 
Don't think I forgot about the food ha ha.  For Dinner I will be cooking Italian Breaded Chicken w/Two Potato Gratin
Can you guess the two types of potato? They are sweet and Idaho(normal) potato backed with red onions and heavy cream. 
Yes I listed the menu backwards but who cares! Its my blog ha ha.  All recipes are in the links below.  I want to make it special since he did surprise me with a romantic dinner that he cooked all by himself.  He told me it took him a little over 2 hours(poor baby).  He made Obi-one Cannelloni.  He's a star wars fan. 
 
Well hopefully everything will taste delicious.  I will be posting photos of what my dishes look like possibly on Monday when I am back at work.  Don't suprised if we gain pounds after this dinner. ;P

Honey Cruise

The past week was the vacation with the Love of my life James.  It was our honeymoon!  We had gone to a 7 day cruise on the Freedom of the Seas w/Royal Caribbean
This was my first cruise so I didn't know exactly what to expect.  James(my NEW hubby) had been on one before but this time he was with super fantastic ME ha ha.  We practically did it all.  From eating like pigs to jet skiing in the beaches or St. Martin! 


If you have never been on a cruise, word of caution.  You will gain weight.  The food on the boat is endless and delicious! It was pretty bad knowing that we are heading to the room and thinking in our head what we haven't ate or tasted yet.  Oh and they had amazing Fruit and Ice Sculptures. 


The entertainment on the ship was awesome along with the service.  I was spoiled and attended to every need and want that I thought of.  If I threw my clothes on the floor it was picked up.  If I forgot to flush the toilet and it was flushed for me! ha ha (that only happened once). 

Unfortunately we weren't able to get off at one of the ports due to the in climate weather.  So we headed straight to St. Thomas where we went on a Sea turtle snorkeling excursion on a Pirate Ship which was really cool.  Our ship/sail boat looked just like this one but with black sails. 



Ive been snorkeling before but for some reason my breathing tube turned into a salt water sucking STRAW! and my eyes were burning but as you can see we were happy.

The crew on the ship were AWESOME!  They made us really have a good time while being professional and funny.  They liquored us up which is always a good sign with PAIN KILLER

According to what I saw in the drink Pain Killer it was Rum and thick Orange Juice.  The next 3 drinks were the most amusing moments of the trip.  The liquor stayed in my system till dinner time.  Man was I fool on that table.  I would definitely recommend this excursion to anyone who has a funny sense of humor and likes to drink. 

Going on the cruise for our Honey Moon was definitely worth it.  I was pampered and stuffed till I couldn't no more.  Next cruise will be in a couple of years.

After wedding thoughts

Yes March 18th was the date of our wedding.  It was all there and now it's history.  It was amazing how it went by so fast.  I didn't get the chance to really converse with my family.  Only because everyone wanted to take a photo with us.  ha ha :). 

Even tho I wasn't able to go to the GYM as much as I wanted to I still maintain my figure.  All the stress just made me loose wait with out even trying.  Not that I need to loose the weight but to be fit.

Of course not every wedding is supposed to run smoothly or else you would be living in a perfect world and obviously we aren't there yet.  The boutonnieres that were made the day before had frozen in the refrigerator because they were stored in baking sheet pan with water.  Some how someones light bulb didn't turn on thinking that metal, water and cold air would hurt the flowers. 

Thankfully there was a back up plan to use whatever was left of the other flowers to make last minute boutonnieres.  If only I would have known how much energy and time was needed to be spent on making all of my centerpieces I would have done it a whole different way.  Just to keep the flowers alive was a hassle.  We needed to have the fridge completely clear of food in order to fit all of the bridal bouquets and mines too.  The last 2 days before my wedding it was a blur.  From the flowers not being shipped for some freak accident reason to freezing boutonnieres. 

Overall it was an experience that should only be done once, and only once.

27 Days Until my Wedding

My feelings are surreal.  Is it really happening that I am getting married.  This is what every little girl dreams of.  Is it really how I always envisioned it?  What sucks is that I wont be able to attend every matter because I will be depending on others to make my dream into a reality.  Depending on others is not #1 on my list, especially when they are close friends and or relatives. 


These last couple of days are all about details, Details, DETAILS!  I will be getting James a grooms cake of R2D2 which I am excited for and then surprising my mom with a song dedicated to her with a Large bouquet of some type of flowers.  Its hard to keep all these surprises to myself.  ha ha Thankfully I don't have a large thread of friends. 

I will be having the R2D2 cake done by Sweets! by Holly.  This is a bakery located in Waterford Lakes.  The cupcake wont look exactly like this photo but it will be along the lines of the design. 
 

Another factor to stress about is that we are having a choreographed dance in our wedding. 
Something that we have been working at for the last couple of months.  It is coming together but not as well as I expected.  The nerves are setting in and I need a doz age of confidence.  Everyone says that it will all go well but sometimes I feel like they don't understand.

*Sigh*

My baccalaureate party is this weekend  which hopefully I could let loose and have FUN FUN FUN!

Wedding Gifts!

The excitement of hearing the doorbell and peeking outside the window to see that someone has sent you a PACKAGE! Not just any package.  A present from MACY'S! 

Your wedding day is not just about walking down the aisle with the one you love, but to also to be showered with GIFTS and MUCHO MONEY! $$$$


Most of the things that I put on the registry on Macy's was unrealistic, but some little thought in the back of my mind thought that....maybe....just maybe it could happen.  Plus, I do need them for my new apartment.  I had set low expectations on receiving gifts, that way I wouldn't feel bad.  But I was proved wrong :).  

Things to keep in mind:
  1. Be realistic
  2. Put on the list what you truly need
  3. Very few wants
  4. Do NOT set high expectations on others
  5. If you don't like what you originally chose online you can always return or exchange it
  6. Don't worry be happy :)
It feels good to know that once you are doing everything Jehovah's way he will always bless you somehow.  Even tho my wedding is 2 months away I chose to do the auxiliary this month of January and I can already see the blessings.  :)  So put Jehovah first and everything else and even more will be given.  :)

Cycling Just Twice a Week

Many of us may feel flabby and just unmotivated.  We get home from a long day from work and just want to relax.  Almost every day is the same routine you are used too.  


It is a shame to put our beautiful body to waste.  Eating while watching T.V.  I mean there is nothing wrong with that.  Lets remember that bikini season is right around the corner.  Is your body bikini ready?  In my case is if my body is Wedding ready?


With only 57 days until my wedding I have been sweating off the calories off at the GYM at the Cycle class.  Just twice a Week every week.  Every class I shed at least 400 Kcal.  


Many people may think that Spinning/Cycle class is too hard and that the people go are CRAZY! ... well maybe just a little... haha.  BUT that class is about endurance.  If you have none its a perfect place to start.  There are women there who are larger, and older that me.  Those ladies kick my butt in cycle!  Instead of feeling bad about myself I feel MOTIVATED TO BE BETTER!  Just think about it if they can do it I can do it too.


My goal is to be Wedding Shape!
